Gnowfglins   this is a paid for learning series that I love and it took the fear out of taking the next step on cheese making. She has inexpensive payment plans for learning the simple lessons, downloadable lessons, and menu plan for simple to follow videos and directions.

Nourishing Traditions I love this book and all the information that in packed into it. There is a lot of learn and gain from buying this book for your library.
